Pineapple Margaritas

Sweet, tart and delicious!

Ingredients

Kosher salt for rimming glasses
1 part silver tequila
4 parts pineapple juice
½ part triple sec
¼ part lime juice
Lime and pineapple wedges for garnish

Directions

  1. Rim glass with kosher salt.
  2. In a shaker with ice, add tequila, pineapple juice, triple sec and lime juice.
  3. Shake vigorously and pour into rimmed glass. Garnish with lime and pineapple wedge, if desired.

Easy Fish Tacos

Prep time: 15 minutes Cook time: 6 minutes Yield: Serves 4
For the Fish:
1 lb. cod, tilapia, halibut or other white fish filets
2 – 3 tsp. chili powder, or enough to coat fish
1 tsp. salt
 
For the Fish Taco Sauce:
½ cup sour cream
¼ cup mayonnaise or plain Greek yogurt
3 – 4 Tbsp. lime juice (from 2 limes)
1 tsp. hot sauce, optional
 
Fresh Ingredients for Assembly:
½ small head red cabbage, shredded (about 4 cups)
12 taco-sized corn or flour tortillas
1 avocado, sliced
4 radishes, thinly sliced
4 spring onions, thinly sliced
⅓ cup chopped fresh cilantro

Easy Fish Tacos Directions

  1. Make the Fish Taco Sauce: In a small bowl, combine the sour cream, mayonnaise or yogurt, lime juice and hot sauce if using. Stir until combined. Set aside.
  2. Make the Red Cabbage Slaw: Combine the shredded cabbage with 3 Tbsp. of the Fish Taco Sauce. Stir to coat and add more sauce if needed. Don’t overdress – a thin coating is the goal
  3. Warm the Tortillas. In a dry skillet over medium high heat, warm the tortillas one at a time for about 30 seconds on each side. Alternatively, wrap 2 or 3 tortillas in a damp paper towel and microwave for 30 seconds until warm. Keep the warmed tortillas wrapped in a clean dish towel while you make the fish.
  4. Season the Fish: Sprinkle the Dish on both sides with chili powder and salt.
  5. Cook the Fish: Warm a large skillet on the stovetop. When hot, add one Tbsp. of olive oil and coat the bottom of the pan.
  6. Serve the Tacos: Transfer the cooked fish fillets to a platter and a gently break the fish into large chunks. Assemble the tacos with a few pieces of fish, some slaw and the other toppings of your choice. Add a drizzle of fish sauce to finish.
